Fiddlehead Fern Along Calamba Road
I was always intrigue with this kind of vegetable that was selling along the main road of Calamba specifically going to the resort.
When I was doing our jog during the weekend, I found out that this is Pako. I known this plant as one of the ornamental leaves that we use during our flower arrangements. This plant is also great when hanging along veranda or terrace.

But this kind of fiddlehead fern family plant is different. Its edible. It has this small leaves that can make into salad, gata or kinilaw partner with fish, seafood, grilled chicken or pork.
I already tried the Pako Salad which I also posted here when we were in San Pablo at Kusina Salud.This veggie is also serve regularly at Lutong Pilipino ni Aling Ely cooked with gata and fried fish.
Now it is time for me to try it myself buying this vegetable that cost only P 20.00 for two bundles and make it a salad.

For a start, I prepare onions and tomatoes for slicing.

To make it more appetizing, I can top it with cheese and red egg which are all available at our kitchen.

What I did was to use the dressing of Chef’s Toby’s Fusion Vinaigrette that I brought at Legaspi Sunday Market.

Before the final arrangement in the bowl, I have to blanch first the vegetable in hot water and immediately transfer it to cold water to stop the cooking process retaining the freshness and the green crisp part.
When I served it at the living room table, kids were stunned because this is not the usual food servings like chips, pizza or spaghetti.

They tried it and I am amazed to see that they love it. It is not only a delicious veggie but also a good source of calcium, phosphorus, iron, and vitamin B.
There you have it, simple, affordable yet healthy food where family pleasures and gatherings can satisfy their appetite.
It has more supplies of paku during this rainy season and once you saw it along the Calamba main road, try it. You can also found it in your local market.
